One-pot cooking makes clean-up a breeze!

Prep Time: 5 minutes
Cook Time: 20 minutes
Serves: 1

Things you need

·  1/2 tsp sunflower oil
·  1 small onion, chopped
·  1 large or 2 small boneless, skinless chicken thigh fillets, cut into chunks
·  1 mug frozen mixed vegetables (approx. 350ml)
·  2 tsp curry paste (choose your favourite & level of spiciness)
·  1/3 of a mug uncooked basmati rice (approix. 115ml(
·  2/3 of a mug chicken stock (approx. 230ml)
·  1/2 mug frozen leaf spinach (approx. 175ml)

Here's how

1. Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside of the chicken, then stir in curry paste and rice. Cook for another minute.

2. Pour in the chicken stock and throw in any larger bits of frozen vegetables. Bring to the boil, then lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining vegetables. Scatter over the spinach, cover, then cook for 10 minutes more until all the stock is absored and the rice is tender. Give everything a good stif, season with salt/pepper to taste.

Helpful Notes

·  If you want to cook and share with friends or cook a larger amount to take for lunch or leftovers, then double or even triple the ingrediant amounts. Make sure you use a pan large enough to accomodate.
