We consider quantum field theories prepared in far from equilibrium states that are homogeneous and isotropic in space. First we will review results from free field theories and 1+1 dimensional conformal field theories prepared in such states. Then we turn to strongly coupled field theories that have a weakly coupled gravitational dual and show how a qualitatively similar picture of non-equilibrium dynamics of the dual field theories arises from black hole formation, together with some interesting differences. As our main observable we will consider the entanglement entropy of spatial subregions.
