This talk will give a brief introduction to current practices in cafe style espresso extraction. At present, making the tastiest cup of coffee is considered an art; one that is best done by a barista. However, it is possible that processes can be improved by better understanding the physical processes that occur during brewing. To this end, we will develop a physics-based mathematical model for the extraction process. By combining this model with experimental data we will show that the model is able to reproduce some of the trends that are observed in practice. We will then discuss how the model suggests possible strategies to make espresso more efficiently.

Dr Jamie Foster, University of Portsmouth. Jamie's work focusses on developing and analysing mathematical models of physical process arising in practical problems and interpreting the results into their original context. The majority of his work takes place on the interface between mathematics and other sciences, namely; physics, chemistry, engineering and biology.
